Experience a deep dive into the evolution of Burgundy. Each winemaker has curated and brought with them a vertical flight to showcase the terroir and aging potential of one of their very special premier cru parcels:

  • Thiebault Huber: Volnay Clos des Chênes 1er Cru (2015, 2019, 2022)

  • Vincent Chevrot: Maranges Fussières 1er Cru (2012, 2017, 2020)

  • Odilon Marchand: Beaune Tuvilains 1er Cru (2021, 2022, 2023)

Chef Kevin Gibson will be preparing a world-class menu designed to pair specifically with these rare flights. Given the limited seating, we expect this to fill quickly.

Caveau Selections have invited three of their most cherished Burgundy winemakers to make the journey to the Pacific Northwest specifically to spend time with the Willamette Valley community. Please join us in welcoming Thiébault Huber (Huber-Verdereau), Vincent Chevrot (Domaine Chevrot), and Odilon Marchand (Marchand-Tawse) for an intimate dinner.

The Evening This will be a celebratory multi-course sit-down dinner featuring representative wines from all three producers, including some older vintages pulled directly from their cellars.

The featured wines are:

Huber-Verdereau - Meursault Dressolles 2024, Pommard Bertins 2015
Chevrot - Maranges Fussieres Blanc 2019, Maranges Fussieres Rouge 2019
Marchand-Tawse - Savigny Vergelesses 2021, Morey Saint Denis Les Millandes 2021

Please join us at The University Club in Portland on Friday, Oct. 3rd at 6:00pm for an all new Paulée dinner celebration!

A Paulée* (pronounced poh-lay) - one of the great traditions in the world of wine - is an evening of great food and older vintages in recognition of the end of the grape harvest. Caveau brought this great event to Oregon for the first time in 2006, and this year will be particularly special as it commemorates  what is believed to be the first Paulée de Meursault in the cellars of Jules Lafon--100 years ago!

There will be an hour of hors d'oeuvres, served with a fine selection of our Champagnes, followed by a delicious multi-course menu. As is the tradition, you are invited to bring a bottle or two of older Burgundy or Oregon Pinot from your own cellars to share.

Our past attendees often dig deep and bring some astounding "unicorn" bottles from their cellars to share!

And as noted above, whether you're joining us from out of town or not, on the following days, October 4th and 5th, we'll roll open our warehouse doors for our twice annual tasting and open house.
This should be Portland's classiest BYOB party for one evening in December!

The University Club is located in downtown Portland and at 1225 SW 6th Ave near the Art Museum and South Park Blocks. There is ample garage and off-street parking available, and many hotels within walking distance. 

If you wish to reserve an entire table of 6 or 8 let us know in your reply. While this is not a black tie affair we encourage attendees to dress for a nice night out. Ties not required.

You're invited to spend an hour or two enjoying some fantastic wines, bbq, and cheeses. Plus, you can further indulge in a side tasting of special Oolong teas from our in-house guru and perhaps take a self-guided walk around our 31-acre vineyard to work it all off.  

In addition to popping some of your favorite Champagnes and Burgundies, we'll aslo be pouring a number of our Royer Vineyard estate wines including the 2022 Witzel & Wind Chardonnay which recently earned a 96 point rating from both the Decanter and Paul Gregutt of Northwest Wine. 

This will be a complete day ~ Champagne, Burgundy, Oregon wines, delicious food, a calm surrounding, and plenty of good times among friends.
