When Scott is in Burgundy, he tends to "meat up," a phrase coined by my dear friend Juliette Levy. So upon his return two days ago, I turned to one of our all-time family favorites. I've made this so many times in its original version but when I switched out the ground beef for Beyond Meat crumbles for our meat-free Caveau Kid, we all liked it even more.
This is a good one for the repertoire since it's packed with protein but not fat, and because it's a delicious, hearty veggie chili. Look for Beyond Meat in the freezer section.
This recipe has complex, smoky flavor but is a snap to make and always a hit.
Touchdown Chili, Original or Meat-Free
2 slices thick cut bacon, finely chopped, optional
1 large onion, finely chopped
1 large garlic clove, minced
1½ lbs lean ground beef (or one 11 oz bag of Beyond Meat crumbles - plain or Feisty flavored)
1 T plus 1½ tsp chili powder
1½ tsp ground cumin
1½ tsp smoked Spanish paprika
½ tsp to 1½ tsp cayenne pepper
about 1 tsp salt
1 can (14.5 oz) crushed fire-roasted tomatoes
1 can (8 oz) tomato sauce
1 cup beer (ale, amber, whatever)
1 tsp Worcestershire (Annie's makes a vegan one)
2 can (14.5 oz) pinto or kidney beans, drained
sliced green onions for topping
In a large heavy-bottomed pot over medium-high heat, cook bacon, stirring until it just begins to brown, about 4 minutes. If skipping the meat, just heat 2 T olive oil, add onion, lower heat to medium and cook, stirring occasionally until translucent, 4-7 minutes. Uncover pan, stir in garlic, and cook 1 minute.
Increase heat to medium-high and add ground beef or Beyond Meat crumbles. (If using the real beef, break it up with a spoon and stir gently until it loses its raw color, 6-8 minutes. If you're using the Beyond Meat - you don't have to worry about that! Bonus!) Stir in spices and 1 tsp of salt and cook 1 minute. Add tomatoes, tomato sauce, beer and Worcestershire and bring to a boil. Reduce heat to medium-low, cover partially and cook 30 minutes. Add beans and cook 10 minutes, uncovered. Season to taste with additional salt.
