It just doesn't get any better...

Two wonderful tastings, two over-the-top amazing meals, and we're still here to tell the tale and keep on rockin'! Thursday kicked off with a great morning at Sophie Cossy's in Jouy-lès-Reims, and a private tasting for our group of her entire lineup in her new ultra-modern tasting room. I had tasted everything previously, except for the new cuvée of the NV Brut "Eclat", based on the '13 harvest. It's a stunner, really floral on the nose, ethereal, and surprising length to boot.

Sophie then joined us for lunch at the hugely-buzzing Racine in Reims, where they are knocking out some of the most delicious, pure, precise edibles anywhere on the planet today. Pictures tell many thousands of words, so here are a few...

O. M.G! Then we were off to Champagne Marc Chauvet in Rilly-la-Montagne, where Clotilde Chauvet took everyone through the cellars, had us riddle a few bottles, and then hand-disgorged a bottle of the new cuvée of Brut Sélection which we tasted without dosage, alongside a bottle of the same wine with an 8g dosage - a great illustration for the group of how the dosage dramatically changes the wine and brings everything into focus when done well.

There are not adequate words to fully express how wonderful an experience it is to dine at l'Assiette Champenoise, the Michelin 3-star temple of gastronomy helmed by the brilliantly talented Arnaud Lallement. Wow. Whoa. Again, we'll let the pictures do the talking...

And that was the short version of the tasting menu (and I forgot to take pics of a course or two, including the two desserts!) We all then succumbed to a lovely food coma. Can we keep this pace up? Probably not, but we have no intention of slowing down! Tastings with four great producers are on tap for Friday, not to mention a couple of killer meals. We do what we must!
